A very Special 21st Birthday Cake!
Here is another pecial cake story!!! I love my job!!!!!!!!!
I got a call from a mother that wanted to order a cake for her daughter's 21st birthday.
Here are the details:
I only had about 7 days or less to complete it. (Having Christmas orders made this hard!)
It had to look like a gift box...and you had to be able to open it! And not only that...the family wanted to be able to place inside some special gifts...such as a letter from a grandmother, pearls, etc.
She needed 4" on top she said :0
We also needed to incorporate, lots of colors!!!, music (her father had passed away and he was a musician), a daffodil and a gift tag.
Here is the result of what Leo (my brother) and I came up with!
The height of this cake was about 8".... 4" for the gifts and 4" of cake.
What do you guys think?
I spoke to the mother 2 days later, unfortunately they had not tasted the cake yet! The daughter did not want to cut the cake! The mother assured me that they were going to cut it that night I talked to her!

I have always wanted to do all the Disney Princesses... they are a lot of work but a lot of fun!
I now have some time to work on some of them....

Thank you EDNA!
Well…I get asked a lot how I started and where I got all my Cake Decorating Education. Let me start from the beginning!
Let me introduce you to my first Cake Decorating Instructor: Edna De La Cruz.
It was my mother’s idea to take a Cake decorating class at our local Michael’s Store. I was pregnant at the time (2006) and thought it would be a great thing to learn for when it was time for my child’s birthdays! I honestly didn’t know what to expect. My mom had always been the one that had been very crafty and I was not sure what I was getting myself into.
I had gone with my mom to other crafty group sessions and it never turned out that great! But again this time I gave it another shot! When I got to the class I couldn’t believe it… The first thing I noticed was…..This totally gorgeous lady was teaching it! She was super nice, always smiling, sweet and amazing at her cakes!
I remember saying to myself….Wow this is not boring! And she is soooo pretty…I want to be just like her! She had so much patience to really make sure everyone GOT IT! I remember being in class and my royal icing was way too hard….or way too runny and she came to the rescue! She always was positive about the whole thing… (I had a really hard time with royal icing at that time…ok ok…I Still do sometimes…)
Besides my mom, for her telling me to go to the class…… Edna really made my first Cake Decorating experience one to remember! Thanks to her I will never stop making cakes….It has now become my addiction! She is the one that got me hooked! I hope to one day soon, be able to see her again and do a cake together… I would love to pick up more tricks from her! She is truly an amazing person… She continues to help many inspiring cake decorators and professional cake designers with her free videos and DVD tutorials. If you ever get a chance to take a class with her, TAKE IT! I am sure it will also be one to remember! To you EDNA: THANK YOU! You are beautiful inside and out! Hope to see you soon!
