Leave the baking to the PROS!!! My BROTHER!

My brother... my best friend... My favorite baker! Here is a little history on my background...... I am the youngest of 5.  I have 4 older brothers.  We are all really close and very talented in many ways.  The youngest of my 4 brothers is Leo and him and I have something in common... CAKES!!! That is why we decided to go into the business together.  As you can see from our logo..Its a picture of Him and I.... Nope...he is not chubby in real life!  and yes ladies he is now taken!  Well here is another little secret...I have no patience for baking... and he is an amazing Pastry Chef!  Sooooo... He bakes and I decorate!  If anyone asks...who does more work... "I DO!"  Kidding.. To be quite honest its really equal... sometimes he bakes for 10 hours and I only do a simple design of 4 hours... or vice versa.  Of course, working with family is always very smooth and easy... YEAHH RIGHT!!!! we love each other but we don't always see the same picture!  I am the sweetest thing.... but I can also loose it!  (Sorry Leo)  We have fired each other many times.....but at the end... We are FAMILY!!!  I love my brother!!! 

There are times when he is away or one of those times when we have fired one another and I HAD TO BAKE!!!...  :(  Of course since I don't have any patience for anything I don't ever like to read the whole recipe or follow all the directions exactly... I try to rush etc.  Here you will see a picture of a cake I baked myself! (as you can tell!) I took this picture to text my brother for HELP! 

If I didn't have my brother...those beautiful cakes you see would not be so beautiful.  He makes sure they are perfectly leveled...straight...creamed etc.... not to mention how amazing they taste!!!   Without a perfectly prepared cake... the decorations would not look as good!  Thanks Leo (and thanks for your patience...with the cakes and ME!) 

PS: Don't worry guys.. Baking classes will not be taught by me!  :)

Lesson learned:  Must follow directions!  (I am still trying!!! )

OMG!!! Get Ready - Set - GOOOOOO!!!!!

OMG OMG OMG!!!!!!  So the Holidays are HERE!  and its always a stressful time of the year...gifts...decorating the house...school plays etc.  NOW lets add CAKE ORDERS to the list! 
One of our biggest order for December is Weddingbells Magazine.  I love doing events for them!  Its a pleasure...I'm just a little panicked about getting everything done!  Just their order is about 145 cake-pops, 145 decorated cookies, cakes, and 145 cupcakes....Not to mention other orders that come up as we get closer to the Holidays 20 of this...20 of that....!  But like always........The end result will be... beautiful sweets!!! and an exhausted team!!!! Yesterday I bought everything for the decorating part of the orders, 10+ kg of sugar, etc etc ! Today was planning day..What goes where, colors etc.  Tomorrow we will make all the fondant... gumpaste etc. 
My brother has already started buying all the baking ingredients...(I hope! :p )

I always get really excited when I get any order, and of course I always like to complicate myself even more.  I am somewhat of a perfectionist...  I never say No to a design....I actually love a challenge!  Of course people then look at me and ask how I will make that....I always say..."I don't know!..." but somehow I know it will get done! 

Now its probably a good time to get all my Christmas music on my iphone!  ohhh forgot to mention... I'm a little crazy when it comes to cakes.  I usually get into character!  For example I had to watch some clips of the movie Star Wars to make Darf Vader...well I kept saying "I am your father" the whole time...its crazy... For Buzz it was...."To infinity and beyond!!"...  Woody..."I got a snake on my boot!"... Handy Manny...The theme song! etc etc etc... and you have to make the little voices that go with the character too!  So I guess I have to get my favorite song of all time......SANTA BABY!!!!  My family thinks I'm a little crazy...sometimes I talk cake too!  everything I see I always ask myself..."can I make that into a cake?"... I guess that is where the talent comes from....PASSION!!!!
